Tahchin


Tahchin (Persian: ته چین ) is an Iranian rice dish primarily consisting of rice, yogurt, saffron, eggs and finally barberries (Persian: زرشک, romanized: zereshk) are sprinkled on top. Some versions of the dish are more elaborate, folding in chicken fillets, vegetables, fish, or red meat.

Tachin translates from Persian as “arranged on the bottom”. Tahchin is composed of two different parts: the thin part which includes the chicken fillets, saffron, and other ingredients at the bottom of the cooking pot, and the second part which is white rice. In restaurants, tahchin is mostly prepared and served without white rice.

Types

Tahchin can be cooked in various ways such as:

  • Chicken Tahchin (Persian: تهچین با مرغ, romanized: Tachin Ba Morgh)
  • Meat Tahchin (often lamb or beef)
  • Meat and eggplant Tahchin
  • Eggplant Tahchin (Persian: تهچین بادمجان)
  • Spinach Tahchin (Persian: تهچین اسفناج)

Tahchin is usually cooked either in a dutch oven style pot, or a glass baking dish and can be cooked either in the oven or on the stove.
